ABOUT THE CHEFS
Mario Ormaza is the chef/proprietor of some of San Juan's most popular restaurants in the explosive culinary scene of Santurce, including Sabrina, Bottega, Azucena and Café Tresbe. He is a graduate of the Culinary Institute of America and has trained with Michelin-starred chefs such as Jean-Georges Vongerichten.
Pierre-Philippe Saussy worked in France, Belgium, New York and Los Angeles, training under legends such as David Bouley and Roger Vergé. Formerly the chef of L'Auxerre restaurant in San Germán, he is now the chef proprietor of San Juan's Hen House.
Jose Enrique Montes is the chef/owner his eponymous restaurant in San Juan, which put him on the list of Food & Wine's ten "Best New Chefs" in the U.S, a first for a Puerto Rican chef. Since then, he has been chosen as a Finalist for the James Beard Foundation award "Best Chef South," for 5 years in a row. In 2019, he created a brasserie in Condado, Puerto Rico, included in the list of Top 30 Best Restaurants of the world by Food & Wine, and in Esquire magazine’s Best Restaurants of the Decade.
